Japanese soft-boiled eggs (日式溏心蛋)

Marinade

Instructions

  1. Poke holes at top and bottom of egg
  2. Add 1 tbsp vinegar to boiling water, put eggs in, boil for 6 mins, take out and soak in cold water
  3. Combine ingredients for marinade, bring to a boil and allow to cool
  4. Peel away egg shells and put, with marinade, into a plastic bag
  5. Occasionally move eggs around for even colouring
  6. Marinade for at least 2 hours or overnight.
