Ingredients (makes 24 small puffs)
- 250 ml milk
- 125 g unsalted butter
- 1 tsp salt
- 300 g tapioca flour
- 2 eggs
- 100 g grated parmesan
Instructions
- Preheat oven to 200 C (fan temperature)
- In a saucepan, bring milk, butter and salt to a boil
- Remove from heat and add tapioca flour. Stir vigorously, then cool for some time
- Beat the dough until cool, then beat in eggs one at a time
(add 2nd when 1st is fully incorporated)
- When dough is glossy, mix cheese in and beat.
- Spoon small balls of dough and bake for ~30 min
